Eagle Dining to host Luau Celebrations on Statesboro, Armstrong Campuses this April

Break out your tropical shirt and favorite lei! It’s almost time for Eagle Dining’s sixth annual Lakeside Luau Thursday, April 18 from 5 to 8 p.m. at Lakeside Dining Commons on the Statesboro Campus and the inaugural Galley Luau Tuesday, April 23 from 11 a.m. to 2 p.m. at The Galley on the Armstrong Campus.

Lakeside Executive Chef Clay Culpepper, FMP, worked to create a Hawaiian-inspired menu which features mouthwatering dishes like Coconut Crusted Shrimp, Grilled Swordfish with Pineapple Salsa and Island Coleslaw.

“If I had to choose a favorite dish, it would be the Sesame Crusted Ahi Tuna with Ginger Dressing,” said Culpepper. “Fresh tuna is pretty amazing in itself; however, the sauce is what really sets this dish off. I used this sauce in another dish several years ago for a culinary competition and brought home an ACF medal, so it might be a tad bit tasty.”

In addition to delicious food, both luaus will showcase award-winning decorations and live music with DJ Benji Jammin’ J. that will surely have you hula dancing all night long. Plus, guests can take home commemorative drinkware, t-shirts, frisbees and other giveaways (while supplies last) featuring the student-designed event logo!

“We are so excited to be a part of the EDS tradition of hosting this exciting luau,” said The Galley General Manager Michael Doyle. “We can’t wait to put our hula skirts on and get to grilling some amazing food!”

Dining Plan holders can take part in both events as part of their all-access plans. For those paying with EagleXpress, the cost will be $12, and for those paying with credit, debit or cash, the cost will be $15+ tax. Lakeside Dining Commons will be closed 2-5 p.m. on April 18 to prepare for the event, but Dining Commons will remain open to accommodate Statesboro Campus diners during that time.
